Dairy-free Vanilla Orange Cake

35-40 minutes

Ingredients:

  1. Blossom Gluten-free Baking Flour          275g
  2. Baking powder                                     14g
  3. Butter or margarine                             200g
  4. Sugar                                                250g
  5. Eggs                                                   8
  6. Zest of 1 orange Freshly squeezed orange juice            ¼ cup
  7. Cooking oil                                          1 tablespoon

Instructions:

1. Preheat the oven to 175⁰C.

2. Grease a 9” round baking tin and line with greaseproof paper.

3. Sift the flour and baking powder.

4. Add the butter, sugar, eggs, orange zest.

5. Combine the juice with the cooking oil and add.

6.   Using a mixer whisk until well combined and smooth.

7.  Pour into the baking tin and bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.

8.  Allow cooling in the tin for 5 minutes then turn onto a cooling rack to cool completely.

9.  Serve plain or frost with whipped cream or buttercream.
